Low Calorie Vanilla Protein Cake

Since I have been on a journey to compete in a fitness competition it has inspired me to get creative in the kitchen again. I LOVE baking and coming up with recipes because let’s face it, I’m human and I love sweets!! The trick here is to make something at home that will not completely make me blow my calories for the day. So here is a low calorie vanilla protein cake recipe for you! It makes one single-serve mini cake and it really will satisfy… AND it’s only 152 calories!!

I like to use Perfect Nutrition’s Diesel protein powder. I used their french vanilla flavour in this recipe as it is the BEST tasting whey isolate I have used so far. I also used an organic 0% fat Greek yogurt. I have nothing against fat but fat as a macro-nutrient has 9 calories per gram whereas protein and carbohydrates only have 4. So by using a 0% Greek yogurt you are sparing yourself those fat calories and getting more protein.

Mini Vanilla Protein Cake
Serves 1

INGREDIENTS:
1/3 scoop vanilla protein powder (10 g)
1 1/2 tablespoons coconut flour (7g)
1/8 teaspoon baking soda
Pinch of sea salt
2 stevia packets or tsp
2 tablespoons unsweetened applesauce (30 g)
2 tablespoons organic 0% Greek yogurt (30 g)

DIRECTIONS:
Preheat oven to 350 degrees F. Grease a 4 inch round glass ramekin or other small baking dish with non-stick or coconut oil spray.

Add all dry ingredients to a small bowl, and stir well. Add all wet ingredients to a separate bowl and mix well. Pour the dry ingredients into the wet ingredients, and stir just until combined. Do not overmix. Fold in chocolate chips if desired. Scoop the batter into the greased baking dish.

Bake for 15-20 minutes, until firm in the center. Allow to cool before frosting.

Chocolate Frosting
Serves 1

INGREDIENTS:
1/4 cup organic 0% Greek yogurt (57 g)
1/2 tablespoon raw cacao (2.5g)
1 tsp stevia or to taste
¼ scoop vanilla protein powder (3.5 g) – you can use chocolate protein if you have it

DIRECTIONS:
Mix protein powder and cacao powder into the Greek yogurt. Add in stevia to taste, and stir. Whip with a fork until thick and fluffy.

* If you used very similar ingredients to me the macros for this would be
Protein: 23.4 grams
Fat: 1.2 grams
Carbs: 12 grams
~152 calories
